Dad's Birthday Cake

Grandma's 90th Birthday Cake
I made this cake for my grandmother's 90th birthday party. Her birthday is in December and we combined the party with one of our holiday meals, so I made it kind of Christmassy. I had it sitting on a table before the meal and one of my uncles saw it and thought it was a present. He got quite a shock when he tried to pick it up and move it and ended up sticking his hand into the side! It was pretty funny!

Pumpkin spice and everything nice.....
This is an experimental pumpkin spice cake I made while I was working out my recipe. My pumpkin spice cakes are a great holiday option. They're rich, moist, and delicious with cream cheese icing! This one is decorated with royal icing flowers. (By the way, the bird is not icing, I just found him at a craft store and thought he had a lot of personality. He shows up on a number of my cakes!)

Some people send cards, others send cakes. Personally, I know which one I'd rather get! This cake was made for an orthopedic surgeon who successfully put my mom's knee back together again. We're all grateful for that! This is a pumpkin spice cake (my own recipe) with cream cheese icing. The flowers are royal icing.

Coconut Wedding Cake
This is a coconut cake with coconut filling and white mountain frosting topped with toasted coconut. It was the bride's cake for a small wedding. I also did the groom's cake - a red velvet sheet cake. I got an e-mail from the bride after the honeymoon saying that they really enjoyed it and even fought with family (and won!) over who would take home leftovers!

Diamond Wedding Cake
This cake was for a wedding vow renewal ceremony. It's red velvet cake with cream cheese icing. I was asked to make a cake that didn't look too weddingish or Christmassy, but was large enough for 75 - 100 people and was wintery. So, I used cranberries, snowflakes, and an unusual shape. I was told afterwards that it was a hit!

Beach Cake
This is a birthday cake for a little girl who lives near me. It's a chocolate and vanilla cake in altnerating layers iced in buttercream. Just ignore my salt shaker etc in the background! :-)

Hummingbird Cake
This is a hummingbird cake. If you're not familiar with hummingbird, it's a southern cake that has banana, pineapple, and pecans in it. It's very unique and very good. The icing is cream cheese - it was a recipe I hadn't used when I made this and it settled a little between the layers. I've sense gotten that kink worked out. The flowers are royal icing.

This birthday cake was for an English tea party themed event. It is a carrot cake with cream cheese icing.
50th Anniversary
This cake is actually only big enough to feed about 20-25 people. A cake like this is a great option for an elegant looking cake that doesn't have to be really big. This cake is a vanilla cake with buttercream icing.

It's a........
These cakes were so much fun! One of them is pink inside and the other one is blue inside. See where this is going? A mother was going to find out by ultrasound the sex of the baby she was having and this was how the family found out. Since there was only going to be a short time between the ultrasound and the family dinner, I had to make two cakes to prepare for either a boy or a girl! After she called to say, "It's a boy!" I changed the decorating on the other cake and gave it to my cousin's little girl. Worked out well for everyone!

Hot Chocolate Cupcakes
These are some cupcakes that I made for a party. I took a recipe that I had for hot chocolate cake and tweaked it a little. I added some hot chili powder to the cake and red pepper flakes to the icing which gave it a little something special. The marshmellows on top are homemade as well. I have to say, these were ridiculously good! And REALLY rich!
Anniversary Cakes
I am blessed to be part of a very large extended family. I made these cakes for a big family party celebrating my aunt and uncle's 40th wedding anniversary. The chocolate cake is in fact chocolate with combo ganache and chocolate buttercream icing. The white cake is strawberry on the top tier and vanilla on the bottom. The heart and doves are made of white chocolate.
A Fun Birthday Cake
This is one of the very few cakes I've done in fondant. I don't generally use fondant because it's expensive, difficult to work with, and doesn't taste all that good. But if I have to use it I will, and that was the case with this cake. This was my aunt's 50th birthday cake and it was served outdoors in the summer. Buttercream melts, so fondant was the solution! The words on the cake correspond to words that people used to describe my aunt in poems they wrote for a book for her birthday present.
Forest Cake
This was a birthday cake for a sportsman. The trees are rice cripsies on pretzels decorated with buttercream icing.
